The cherries were deseeded and pressed with skin and left to naturally ferment, before ageing in ex-whiskey charred oak barrels for 4 months. Bottle conditioned, this bold and original Cherry Cider is remarkably complex - the skin contact fermentation provides a unique tannin structure that complements the robust juicy cherry profile, whilst the slightest of funk and oak character creep in the back end of the palette.
